Betty Crocker Eat Your Heart Out

I love pumpkin recipes: pumpkin pie, pumpkin bread, pumkin muffins, and yes, pumpkin cookies. I try new recipes every year. And while I've had my fair share of disappointing experiments in the past, I have finally come up with one to write into my recipe book - in ink. If only a photo could do them justice...


Angela's Pumpkin Chip Cookies

INGREDIENTS

2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 1/2 cups sugar
1/2 cup of softened butter
1 cup pumpkin puree
1 egg
1 teaspoon vanilla
1 cup semi-sweet chocolate chips


DIRECTIONS

Preheat the oven to 350 degrees F.

Mix the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well blended. In a large mixing bowl, beat the sugar and butter until well blended. Beat in the pumpkin, egg, and vanilla. Gradually add the flour mixture. Once all ingredients are well-mixed, add the chocolate chips.

Place spoonfuls on greased baking sheets. Bake approximately 12 minutes or until edges are firm. Let cookies cool on the baking sheet for several minutes and then place on a wire rack and cool completely.

Recipe makes approximately 3 dozen cookies.
